Vegan Cherry Cobbler Pancakes
Adapted from CCK Blueberry Pie Pancakes
- 1/3 cup whole wheat flour
- 2 Tbsp rolled oats
- ½ tsp cinnamon
- 1/8 tsp salt
- ½ tsp baking powder
- 1/2 cup unsweetened almond milk
- 1 chia egg (1 tsp chia seeds + 3 Tbsp water)
- ½ tsp vanilla
- ½ banana, mashed (optional – they also taste great without the banana!)
- Cherries, halved OR Blueberries
In a small bowl, mix 1 tsp chia seeds with 3 Tbsp water. Set aside and allow to set for at least 5 minutes.
In the meantime, mix dry ingredients in a large bowl. After 5-7 minutes, add chia egg and remaining wet ingredients to bowl of dry ingredients. Mix well. Heat saucepan to medium heat. Spray with cooking spray (I used Trader Jo’s EVOO cooking spray). Cook pancakes until they reach desired consistency. Be liberal with the cooking spray even in between flips so your cakes don’t stick to the pan! Serves one.
After breakfast, we ran neighborhood errands and tended to the move. We love our cute neighborhood and will miss so much about it. We’re excited to come back to the city as visitors with fresh eyes! Presidio Heights, we’ll miss you!
Thank you for your sweet comments about the new blog design and header! I used a great program called Picnik to put together the collage-style header. I’m still far from being technologically savvy (typing doesn’t count?), but I’m learning!
What is you favorite soundtrack to cooking and baking these days? Lately I’m loving Mumford & Sons, Dave Matthews Band, Jack Johnson, The XX, and plenty of Texas country.
