Vegan Cherry Cobbler Pancakes and Blueberry Pancakes

Vegan Cherry Cobbler Pancakes

Adapted from CCK Blueberry Pie Pancakes


  • 1/3 cup whole wheat flour
  • 2 Tbsp rolled oats
  • ½ tsp cinnamon
  • 1/8 tsp salt
  • ½ tsp baking powder
  • 1/2 cup unsweetened almond milk
  • 1 chia egg (1 tsp chia seeds + 3 Tbsp water)
  • ½ tsp vanilla
  • ½ banana, mashed (optional – they also taste great without the banana!)
  • Cherries, halved OR Blueberries


In a small bowl, mix 1 tsp chia seeds with 3 Tbsp water. Set aside and allow to set for at least 5 minutes.

In the meantime, mix dry ingredients in a large bowl. After 5-7 minutes, add chia egg and remaining wet ingredients to bowl of dry ingredients. Mix well. Heat saucepan to medium heat. Spray with cooking spray (I used Trader Jo’s EVOO cooking spray). Cook pancakes until they reach desired consistency. Be liberal with the cooking spray even in between flips so your cakes don’t stick to the pan! Serves one.

After breakfast, we ran neighborhood errands and tended to the move. We love our cute neighborhood and will miss so much about it. We’re excited to come back to the city as visitors with fresh eyes! Presidio Heights, we’ll miss you!

What is you favorite soundtrack to cooking and baking these days? Lately I’m loving Mumford & Sons, Dave Matthews Band, Jack Johnson, The XX, and plenty of Texas country.

Honestly I don’t listen to music when I’m in the kitchen — sometimes I’ll have the tv on for background noise, but music kind of distracts me and I think I’d end up forgetting some very important ingredients :)

That’s smart to go without the music, Holly! I just can’t resist. I like to dance and sing while I cook, so at least I know what’s to blame if I mess up any recipes :)

perfect consistency or not those pancakes look wonderful! I keep wanting make pancakes in the morning but keep doing some version of oats. I must try something new this week!

Oh, and we haven’t actually moved yet. These pics are from our neighborhood in San Francisco. I probably seem too relaxed to be moving in a matter of days, but we move this week!

I have to say I am a Christmas music lover! There is nothing better than baking around the holiday’s with some Christmas music :)

I love baking to Christmas music! I remember my college roommate was shocked when I started listening to Christmas music in early November! Seems normal to me! Everyday is just a day closer to Christmas, right? :)

Just catching up from the weekend, and I love the new header, too! Yours is much cuter than mine. I used picnik, too, but I about tore my hair out. For real!

I love baking to Sara Bareilles . . . she has wisdom. Love her. I also put on reruns of Gilmore Girls while I cook/bake, too. Weird, but snappy banter is perfect to cook to! :)

Jack Johnson is definitely my fave cooking companion. I just love his music. I usually set Pandora to the Jack Johnson channel and just enjoy his music and whatever other artists they deem are similar to his style – it’s great! Mumford & Sons, Damien Rice, Jason Mraz….great stuff!

I love pancakes, too!! I only make them once or twice a month because I never feel like pulling all of the ingredients out of the pantry, but they are so good!! That kabob looks delicious. I love coconut rice, too! Yum!

I was cooking today and had my Ipod going on the dock thingy we have and was grooving away to Black eyed Peas, Jet, Aretha Franklin, Katy Perry, Kelly Clarkson, Britney, etc etc!! I love all types of music but I especially love music to dance to!
Pancakes look delish and Chia egg is very cool!!
